Caramel Apple Oat Squares

There always seemed to be a plate of these squares in Grandma's kitchen for the children.
Ingredients
(Serves 12)
- 1 cup firmly packed light brown sugar
- 8 tablespoons (1 stick) butter, softened
- 1 3/4 cups quick-cooking oats
- 1/2 cup chopped pecans
- 3/4 teaspoon salt
- 4 to 5 medium Granny Smith apples, peeled, coarsely chopped (about 4 1/2 cups)
- 3 tablespoons all-purpose flour
- 1 (12-ounce) jar caramel ice cream topping
- 1 quart vanilla ice cream, optional
Grandma's Secret Trick
If Grandma didn't have quick oats on hand, just old-fashioned oats, she pulsed them in a blender, about 3/4 cup at a time, to make them smaller and reduce the cooking time. On the other hand, if she only had instant oatmeal available, she knew not to bother. Grandma tried that once and learned the hard way that it doesn't work so well.
