Raspberry Chocolate Bars

I loved making these bars as a child, because I could help spread the jam and sprinkle on the topping.

    Preheat the oven to 350ºF. Grease a 13 × 9-inch baking pan.

    Combine flour, granulated sugar, butter, pecans and egg in a large bowl and stir until crumbly.

    Reserve 11/2 cups of the flour mixture. Press the remaining flour mixture onto the bottom of the prepared baking pan.

    Spread raspberry jam over flour mixture in baking pan. Sprinkle with chocolate chips. Top with the reserved flour mixture.

    Bake until lightly browned, about 40 to 45 minutes. Transfer baking pan to a wire rack to cool completely. Cut into bars and serve.

Grandma's Secret Trick

The flavor combination of chocolate and fruit was one of Grandpa's favorites, so Grandma experimented with using different jams to make her cookie bars. These bars are equally good made with either apricot or strawberry jam.
